classic greek salad


i think the trick is to keep it simple. nice fresh greens including rocket, basil and mizuna. halved cherry tomatoes. cucumber slices or thin sticks. some thinly sliced carrot. and to top it off fresh and juicy calamata olives and soft danish feta cheese. for me it is all about the dressing. for this one i think a simple vinaigrette made using olive oil, lemon juice, mustard and a pinch of sugar is perfect.

blow your mind chilli poppers


crispy on the outside. spicy. soft and cheesy on the inside. they're quite a mission to make but definitely worth it.  the best jalapenos to use are the big ones you buy in tins or jars. then all you do is stuff them full of cream cheese, feta and mozzarella with salt and pepper. sometimes they are covered in a thick pastry, but i like them just like this >>  dipped in egg and breadcrumbs and fried 'till golden brown. served with a sweet and tangy coriander and cranberry sauce. yum yum yum.

thai chicken hot pot

you will need
chicken (breasts or on the bone)
one large onion, potato, carrot
oyster mushrooms
three tomatoes
fresh ginger garlic and chilli
two limes 
celery leaves
soya sauce
salt and pepper



pan fry the chicken with salt until golden brown. take the chicken out and use the same pot to fry the onion, ginger and garlic. throw the chillies in whole. next you add the chopped carrots and potatoes, some water or chicken stock and chopped tomatoes. cook this at a moderate temperature until the veggies are soft. put the chicken back into the pot. the mushies, lime juice, soya sauce and celery leaves go in just before serving.
